A Shit-hot, Cheap Vegan Salad Recipe.

I don’t know about you but I’ve never been a salad person. Watery vegetables with a fake crunch that aren’t actual crisps were always disappointing. Never quite satisfying that hunger inside that wanted something crunchy and crispy to eat. Who wants to eat food that’s 80% water anyway and all that prep work sounds like such a drag… Until now.

Around December time I started trying to experiment with healthier foods that were good for you, filling, cheap AND tasty all in one. I started eating salads and for the first time in my life- actually enjoying them! I’m not going to bore you with the health benefits of salads or tell you you need to start eating them- although you should be looking into it ;). I’m simply going to supply you with the recipe to do so if you want.

For this recipe you can really use any type of veg you want but I like to use a rainbow of colours in my salads to vary the nutrients I’ll be getting from the meal. I choose a mixture of the following:

Red Cabbage

White Cabbage

Lettuce

Grated Carrot

Red Onion

Spinach

Red Pepper

Tomato

Cucumber

I then top it off with this delicious dressing that makes any salad taste like salt and vinegar peanuts! All you need to do is mix 2 Tablespoons of peanut butter and 8 tablespoons of vinegar into a jar. Mix it thoroughly until it makes a creamy sauce and then pour on your salad just before eating!

Et voila! Enjoy your delicious healthy salad with no added oils, sugars or salts!

I’ve met a few people that hate vinegar or peanut butter- and I secretly believe they must also hate happiness- so a citrus juice like lemon or lime would make a great substitute for vinegar and your favourite nut butter will substitute peanut if you don’t like it.
